Physical, bromatological and phytochemical characterization of the fruit of Euterpe oleracea Mart

Euterpe oleracea Mart., popularly known as açaizeiro, it has been gaining prominence due to its broad phytotherapeutic spectrum. In this context, the study sought to investigate the physical characterization (individual mass of 20 fruits, longitudinal and transverse diameter), and bromatological (total titratable acidity, pH, soluble solids, lipids, moisture, proteins and ash) in the fresh fruit pulp , and phytochemistry (alkaloids, coumarins, steroids/triterpenes, saponins and tannins and phenols) in the 70% hydroalcoholic extract of the plant’s fruit pulp. The fruits were collected in the municipality of Belém (PA), in the Umarizal neighborhood, and analyzed in the bromatological analysis laboratory of the Centro Universitário da Amazônia (UNIESAMAZ). In the physical characterization, the average weight varied between 1.13g-1.89g, the diameter between 1.296cm - 1.569cm, vertically and 1.108cm - 1.343cm horizontally and are convergent with the literature analyzed; the results obtained in bromatological analyzes were acidity of 1.7924 g / 100g, pH 5.04, °Brix 0.3, determination of total lipids 2.67%, humidity 68.16, proteins absent and ash 3.57% , however, only the pH and ash analyzes showed similarities with the literature analyzed; and finally, the metabolites that were positive in the phytochemical analyzes were alkaloids, coumarins and condensed tannins. Therefore, studies suggest excellent nutritional quality, considerable size and quantity of pulp and promising activity of nitrogen compounds for the pharmaceutical industries.
