Abstract

Entre as unidades hospitalares responsáveis pela preparação de alimentos e que merecem especial atenção, devido ao risco de veiculação de microrganismos através dos alimentos, encontra‑se o lactário, que é o local destinado ao preparo, higienização e distribuição de mamadeiras de leites e seus substitutos, juntamente com água, chá e demais hidratantes para alimentação de recém‑nascidos e de pacientes da pediatria (SALLES & GOULART, 1997). Assim, uma das formas de veiculação de microrganismos patogênicos a recém‑nascidos e crianças de baixa faixa etária podem ser as fórmulas lácteas infantis em pó preparadas em mamadeiras, diluídas em água.
